Cumin
Cumin is the seed of a small umbelliferous plant. The seeds come as paired or separate carpels, and are 3 to 6mm long. They have a striped pattern of nine ridges and oil canals, and are hairy, brownish in colour, boat-shaped, tapering at each extremity, with tiny stalks attached

Applications: as an ingredient of most curry powders, savoury spice mixtures, stews, grills.

Fennel yields both an herb and a spice. Fennel seeds split into two, one sometimes remaining on the stalk. They are 4 to 8 mm long, thin and curved, with colour varying from brown to light green (the green being superior).

Coriander seeds are almost spherical, one end being slightly pointed, the other slightly flattened. There are many longitudinal ridges. The length of the seed is 3 to 5. The seed is generally sold dried and in this state is apt to split into halves to reveal two partially hollow hemispheres and occasionally some internal powdery matter. Coriander is available both whole and ground. Coriander is an ingredient of garam masala, pickling spices and pudding spices.
Applications: used in curry powders, stews and soups. Also used in cakes, breads and other baked foods.

Fenugreek is the small stony seeds from the pod of a bean-like plant. The seeds are hard, yellowish brown and angular. Some are oblong, some rhombic, other virtually cubic, with a side of about 3mm.
Applications: used in curry powders, pickles, chutney, etc.

The Dill seed is light brown, winged and oval, with one side flat, with two ridges. The other side is convex with three ridges and three oil channels. Seeds are about 3.5 mm long. It possesses herbal properties too.

The Aniseeds are grey-green to brownish, ribbed and ovate, measuring 2 to 4 mm long. It is a sweeter form of Cumin seed.
Applications: Primarily associated with cakes, biscuits, and confectionery as well as rye breads. Mostly used to flavor soups, fish and root vegetable dishes.
